Is he not referring to a problem with the <br />carpet instead of the the tile ?  you are recommending a hard surface tool and 1000 P.S.I.  or did I miss something here. I have found that a high ph prespray will work good on most restaurant traffic lanes and stains. As Hammy suggested, Enzall is excellent. I also like Soil Break and Grease Eraser. Any of these presprays are the bomb on nasty restaurant grease. Make sure you agitate your prespray into the carpet. I either scrub it in will my groomer or a floor machine with a brush block depending on the carpet and dirt.]]>

You also might want to pad clean the carpet after it is completely dry. Change up the maintenance program to suit the needs of the client. You also might want to change your prespray. Something that will break down grease and protiens.
