I only did the Water Extraction on the carpet
the drywall was replace by their own people
i have this on writing on my invoice that i was not responsible for the walls
and the manager signed so i think i'm ok. but thanks for the advise.

I would not judge by dry to the touch alone. Your going to wanna buy some moisture meters and take down the reading everyday and take pictures of the readings with the dates that way if any questions arise if you dried it enough you have some physical proof. Penetrating and non-penetrating meters. You really should get IICRC certified and take the classes on flood work.
