It makes it a breeze. Especially the etched tile you see in restaurants. The client sees the difference in the tile so much they aren't as picky about the grout.

Using an OP machine on the tile and grout first makes the grout part much easier.

If it has an acrylic sealer/finish on it, you want to strip it first using a stripping brush and a 175 rpm floor machine. You can etch it after you remove the finish

There are applicators for grout sealer. I have two if you want to borrow them.
Its a tube you fill with sealer and it has a toothbrush end for the application. I have stand up version and kneeling version. Kneeling version works well if you have kneepads on.

1 step cleaning and sealing = 2.5-3.5 hrs.  Depends on layout, amount of masking, BSing with custy, quality of install, soil level... 
 
if I have to hit it with acid add 35-45 min
